Both coffees are from Quindio, Colombia - and grown by members of the same family - Jairo and Felipe Arcila. Although there are some similarities, these two coffees could not be more different in how they taste.
The biggest reason for this difference comes down to the processing of these coffees. Jardines del Eden Papayo is an effortlessly clean washed coffee where the intrinsic flavors of the green coffee take center stage, while the Cinnamon Pink Bourbon is an anaerobic coffee infused with cinnamon and tartaric acid during the fermentation phase highlighting the creativity of flavors that can be created through processing.

JARDINES DEL EDEN PAPAYO - Mango nectar, raw honey, blackberry, raspberry, pomegranate, syrupy, silky, juicy.
CINNAMON PINK BOURBON - Cinnamon, raisin, grape jam, bread-like sweetness, cinnamon sugar, cocoa nibs, clean. All adds up to a cinnamon raisin bagel!

JARDINES DEL EDEN PAPAYO
This varietal is a rare mutation that took place in Acevedo, Huila. Ripe cherries have a shape similar to a papaya. This specific varietal was planted in 2021 and has been noted that the cup profile is far sweeter and as floral as a Gesha.
Felipe Arcila is one of the co-founders of Cofinet along with his brother Carlos Arcila. They are the 4th generation of coffee growers. Their father, Jairo Arcila, is a third-generation coffee grower from Quindío. Jairo told his sons that the coffee industry was not profitable because of the many economic challenges he had faced in the past. Because of this advice, Felipe and Carlos both pushed forward with their careers in civil engineering and travelled to Australia to continue with their master’s degrees.
Felipe was amazed by the coffee culture he saw first hand Australia and was inspired to be a part of it. When Felipe finished his studies and returned to Colombia, he became more involved in coffee and started to study Specialty Coffee. Felipe and Carlos then bought Jardines del Edén where their focus is on growing exotic varieties of coffee. In 2015, Felipe and Carlos started Cofinet and began producing, sourcing, and exporting Specialty Coffee to the rest of the world. (Cofinet)
CINNAMON PINK BOURBON
This coffee is super special with a very unique processing method. To be clear - this process takes place at the farm level, it is not a conventional "flavored" coffee that uses additives/oils after roasting to achieve a flavor profile.
The coffee is grown by Jairo Arcila in Colombia and its varietal is 100% Pink Bourbon. The varietal itself yields amazing coffee, but the part that makes this coffee extra unique is how it is fermented during processing. Cinnamon sticks and tartaric acid (often found in wine), are added to the green coffee beans to achieve the desired unique flavor. This fermentation goes for 72 hours, and then the coffee beans are cleaned, washed, and eventually dried.
We receive the beans just as we would any other green coffee, roast it, and then are left with the wonderful flavors that were developed during the fermentation process in tandem with the intrinsic green coffee flavors!
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are the co- founders of Cofinet. Jairo’s first job was at Colombia’s second-largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019. Jairo bought his first coffee farm, Finca La Esmeralda, in 1987 and this is where he planted his first Caturra lot. He was fortunate enough to earn money by producing coffee on his farm in addition to working full time.
Using his savings, Jairo slowly managed to purchase five additional farms. After Esmeralda came Villarazo, Mazatlan, Santa Monica, Maracay and then Buenos Aires. During the harvest period, Jairo is able to provide a number of jobs to locals which has a significant economic impact on their community.
Jairo has received great advice and guidance from his sons who are now experts in producing Specialty Coffee. With their help, Jairo has greatly improved the picking, sorting, and processing of his coffees. His sons have also guided Jairo in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Papayo ,and Gesha growing across all his farms. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavour profiles.
Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast! But most importantly, he enjoys spending time with his family. (Cofinet)

PROCESSING

Washed. This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
CINNAMON PINK BOURBON
Dry infused anaerobic fermentation (72 hours). During this fermentation stage, cinnamon sticks and tartaric acid were added. The cherries were then pulped and placed to dry on raised beds until ideal moisture content was achieved.

SHIPPING: We ship orders on Tuesdays and Fridays. Order cutoff is 12pm the day PRIOR to the ship day. If you ever feel your coffee is not fresh enough, just let us know and we’ll replace it.
Domestic shipping is free for orders of $50 or more. Otherwise, it is a $7.50 flat rate anywhere in the US. We ship everything via UPS Ground.
NOTES ON GRINDING: If you choose “French Press” grind, expect it to be finer than usual, so you’re guaranteed good extraction. Some ultra fine coffee particles will make it through the screen and create a flavorful, albeit slightly opaque cup. In other words, we choose flavor over aesthetics. If you want to keep your cup looking cleaner, choose a pour over grind.
