Produced by the He family—this tea is hand-picked on the misty side of their mountain, overlooking the ocean starting each day at 5am. They are then air dried in bamboo buckets before being withered in a wood-fired cylindrical drum. They are inspected, and then curled into their distinctive twisted shape using a hand driven set up curling plates. Lastly, they spend some time in a wood fired dyer to remove moisture and undergo a final inspection. This process takes about three days from the time the leaves are picked, and it’s this distinctive process and attention to detail that gives this tea its extremely unique, savory flavor.
