Natural processing means that the beans were allowed to dry with the coffee cherry/fruit still in tact, much like a raisin. This processing, combined with Sidama’s natural ability to grow clean, yet intense, fruit forward coffees—creates a distinctive, mouthwatering and memorable cup. This one tastes like a chocolate blueberry muffin with brown sugar on top.

Sidama’s legendary coffee is grown by many small farmers who bring their ripe coffee cherries to a shared washing station
and mill. In fact, most Ethiopian coffee is grown this way, where an average Ethiopian coffee farmer may only farm about two and a half acres of land. After meticulous sorting, this coffee is dried for 8-10 days on raised beds, while being turned every half hour to ensure even drying—a key step in creating a bold-yet-clean naturally processed coffee.
