Our third year in a row purchasing from this micro-mill with a macro-reputation. As a result of working with Las Lajas before, and because we KNEW we had to have it again, we got first dibs on which nano-lot we got to choose, and man, we picked a good one. This year is tasting sweeter and cleaner than ever.
This coffee was grown organically and processed according to Las Lajas's "Perla Negra" method--which requires the fruit be left on the seed and dried for 10 days in the sun, while being painstakingly rotated to ensure even drying. Labor intensive yes, but absolutely worth it.
Las Lajas is a family-run micromill in the mountains in the Central Valley of Costa Rica, and has the distinction of being the first producer in the country to produce honey or natural coffees. Interestingly, they chose to experiment with the method in 2008 after an earthquake cut off their water supply during harvest. Perhaps it was fate. The result was astounding, and it wasn’t long before they achieved industry wide recognition for producing distinctive, award winning coffees.
