La Lagunita

This gem comes to us from a local importer who works directly with Noe Martinez’s family farm in the Marcala growing region of Honduras. This particular coffee exemplifies a typical Honduran profile of rich, deep cocoa balanced by ripe, tropical tasting fruits–sweet, mildly floral and pleasantly tart in nature. This is a coffee lovers coffee-through and through–especially for one who is looking for something slightly different from the standard Central American flavor profile.

Coffee is harvested ripe by Noe and his family and small group of workers--then fermented for 16 hours. Following fermentation, the cherries are placed in newly-acquired solar driers for 16 days before wet processing.
